Ingredients:
- 4 fresh apples, diced
- 2 cups sugar
- 1 cup vegetable oil
- 2 teaspoons vanilla
- 2 teaspoons soda
- 1 teaspoon salt
- 2 eggs
- 2 1/4 cups gluten-free flour
- 2 teaspoons cinnamon
- 1/4 teaspoons nutmeg
- 1 cup nuts
- 1 cup raisins or craisins
Directions:
Placed diced apples in bowl. Add sugar, oil, vanilla, and eggs and mix thoroughly. Sift dry ingredients together; add to wet mixture.
Pour into greased 9×13 pan or baking dish.
Bake at 350° degrees for 60 minutes or until cake shrinks from sides of pan.
Frosting:
- 2 cups powdered sugar
- 1/2 cup butter
- 4 ounces cream cheese
- 1 teaspoon vanilla
Combine ingredients and mix Weill. Spread on cooled cake.
