Ingredients:
- 1/4 cup powdered sugar
- 1/2 cup butter (1 stick)
- 1 cup gluten-free flour
Directions:
- Cream ingredients together and press into 8×8 pan
- Bake at 350° for 15 minutes
While baking above, blend together:
- 2 eggs
- 1 cup sugar
- 1/4 tsp. salt
- 3 Tablespoons lemon juice
- 3 drops lime oil
- 2 Tablespoons gluten-free flour
- 1/2 teaspoon baking powder
Directions:
- Pour mixture over the cooked pastry
- Reduce oven to 325°.
- Bake for 30 minutes
- Allow to cool and sprinkle with powdered sugar
