Dry Ingredients
- 1 3/4 cup white rice flour
- 3/4 cup cocoa
- 1 teaspoon baking powder
- 1 teaspoon xanthun gum
- 2 cups sugar
- 2 teaspoons baking soda
- 1 teaspoon salt
Wet Ingredients
- 1 cup black brewed and cooled coffee
- 1/2 cup oil
- 1 cup sour milk (add 1 teaspoon vinegar – sit 5 minutes)
- 2 eggs or egg replacement
- 1 teaspoon vanilla
Directions
- Mix together wet ingredients and gradually add dry ingredients.
- After mixing well, place in greased and floured 13 x 9 pan
- Bake at 350° for 45 minutes
