Ingredients:
- 1 lb Ground Beef
- 2 tsp Chili Powder
- ½ C Chopped Onion
- 1 tsp Ground Cumin
- 1 16 oz can of Tomato Sauce
- 1 Tsp Minced garlic
- 1 can ( 15 0z) balck beans , drained and rinsed
- ½ tsp Oregano Leaves
- 1 can ( 15 0z) whole kernel corn, drained
- ½ tsp crushed red pepper (optional)
- 1 can ( 4 1/2 oz) chopped green chilies, un-drained
- ½ of a 24 ounce jar of Kroger’s black bean and corn salsa
- 8 corn tortillas
- 2 Cups shredded cheese
Directions:
- Brown beef and onion in a large pan, drain fat. Add tomato sauce, beans, corn, green chilies and salsa , mix. Add all spices except red pepper.
- Bring to a boil. Lower heat to a simmer for 5 mins. Add red pepper.
- In a 13X9x2 inch pan, spray with Pam. Spread 2/3 C meat mix on bottom of pan, top with 4 tortillas, may cut to fit. Pour ½ of remaining meat mix over tortillas and cover with ½ of the cheese. Repeat with remaining tortillas, meat mix and cheese.
- Preheat oven to 350°, bake for 25 minutes.
