Ingredients:
- 1 cup gluten-free pancake mix
- 1 teaspoon baking powder
- 1 teaspoon xanthan gum
- A Dash of Salt & Pepper
- 2 Garlic Cloves- Minced or Chopped
- 3 Tablespoon cold butter cut into small cubes
- 1 Tablespoon Parsley
- 1 cup shredded cheese
- 1/2 cup milk or buttermilk
- 1 teaspoon olive oil
- Topping
- 3 Tablespoon butter
- 1 garlic clove minced or chopped
- 1 Tablespoon parsley
- sea salt, optional
Directions:
- Preheat oven to 400°
- In a large bowl, sift and mix the pancake mix, baking powder , xanthan gum, and salt & pepper together.
- Add garlic, butter, parsley & cheese and cut everything together using a pastry blender. Combine until it is in small pea size pieces.
- Add milk & olive oil and use the pastry blender again to continue to mix all of the ingredients until the dough is thoroughly combined.
- With a small scoop, place the round biscuits on the parchment paper lined baking sheet
- Bake at 400° for 12-14 minutes
- Topping:
- While the biscuits are baking, mix the melted butter, garlic, parley & sea salt together
- When the biscuits are done baking, spoon butter over biscuits & enjoy
- You won’t be able to eat just one!
