Ingredients:
- Two boxes Gluten-free yellow cake mix
- Mix cake mix according to directions using very large bowl
- Add 2 cups shredded carrots
- 1 cup raisins or craisins
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1 cup chopped walnuts
Directions
- Preheat oven to 350°
- Grease or spray 9×13 baking dish or pan
- Bake for 50 minutes or until toothpick comes out clean
- When cool, frost with Cream Cheese Frosting and sprinkle with nuts

Ingredients:
- 1 12 oz package cream cheese
- 2-3 cups confectionary sugar
- 1/2 stick butter (softened)
- 1 teaspoon vanilla
- 1/2 cup chopped nuts
