  • Two boxes  Gluten-free yellow cake mix
  • Mix cake mix according to directions using very large bowl
  • Add 2 cups shredded carrots
  • 1 cup raisins or craisins
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup chopped walnuts


  • Preheat oven to 350°
  • Grease or spray 9×13 baking dish or pan
  • Bake for 50 minutes or until toothpick comes out clean
  • When cool, frost with Cream Cheese Frosting and sprinkle with nuts

Cream cheese Frosting


  • 1 12 oz package cream cheese
  • 2-3 cups confectionary sugar
  • 1/2 stick butter (softened)
  • 1 teaspoon vanilla
  • 1/2 cup chopped nuts
