Ingredients:
- Chicken
- 1/2 pound Chicken, skinless, boneless
- 2 Tablespoons soy sauce
- 2 teaspoons white sugar
- Salad
- 1 head lettuce, shredded
- 4 green onions, chopped
- 2 Tablespoons sesame seeds
- 2 Tablespoons sliced almonds
- garnish with: mandarin oranges, pineapple chunks, rice noodles(if gluten-free)
- Dressing
- 4 Tablespoons sugar
- 4 tablespoons vinegar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 Tablespoon sesame oil
Directions:
- In microwave safe dish place chicken, soy sauce and 2 teaspoons sugar. Cover and cook in microwave for 7 minutes and cut into pieces.
- In small skillet, carefully, toast almonds and sesame seeds on low.
- In small bowl, mix dressing ingredients and add juice from cooked chicken.
- In large bowl, mix salad ingredients, toppings and dressing.
- Can also serve with rice.
