  • Chicken
  • 1/2 pound Chicken, skinless, boneless
  • 2 Tablespoons soy sauce
  • 2 teaspoons white sugar
  • Salad
  • 1 head lettuce, shredded
  • 4 green onions, chopped
  • 2 Tablespoons sesame seeds
  • 2 Tablespoons sliced almonds
  • garnish with: mandarin oranges, pineapple chunks, rice noodles(if gluten-free)
  • Dressing
  • 4 Tablespoons sugar
  • 4 tablespoons vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 Tablespoon sesame oil


  • In microwave safe dish place chicken, soy sauce and 2 teaspoons sugar.  Cover and cook in microwave for 7 minutes and cut into pieces.
  • In small skillet, carefully, toast almonds and sesame seeds on low.
  • In small bowl, mix dressing ingredients and add juice from cooked chicken.
  • In large bowl, mix salad ingredients, toppings and dressing.
  • Can also serve with rice.
