  • 1/2 cup corn starch
  • 1/2 cup potato starch
  • 1/4 cup cornmeal
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon xanthun gum
  • 1 teaspoon salt and ground pepper


  • toss ingredients in plastic bag to mix
  • rinse meat to be fried and toss with coating mix.
  • Fry as usual
